Roasted Mediterranean Potatoes with Lemon and Oregano is the perfect side dish for any meal. These no-fuss mediterranean potatoes are crispy on the outside and soft on the inside. 

I love these potatoes because they meet my Mediterranean Diet recipe requirements: nutritious, delicious, and easy to make! They are packed with flavor from the lemon, oregano and other spices. They are so versatile! You can pair them with fish, chicken, or beef, or make extra and have them in the morning topped with eggs.

Can You Eat Potatoes On The Mediterranean Diet?

French fries get a bad reputation and they’re made of potatoes… So does that mean all potatoes should be off limits on the Mediterranean diet? Well, not exactly. 

Potatoes are actually a nutritious starchy vegetable that can absolutely be part of a healthy diet. The important things to keep in mind are how the potatoes are prepared, and portion sizes. 

  • Potatoes are a great source of potassium. They also contain some fiber and vitamin C. 
  • Potatoes provide our bodies with primarily carbohydrates which are a source of quick energy. 
  • We want to pair these types of food with a source of protein and healthy fats to keep us full longer and balance blood sugar levels. 

On the Mediterranean diet, all foods are included. So the good news is, if you love potatoes (who doesn’t?!) then you can continue eating them on the Mediterranean diet.

These Mediterranean roasted potatoes are so versatile. They pair wonderfully with chicken, fish, fresh salads, and even alongside eggs.

What You Need To Make Mediterranean Potatoes

  • Baby yellow potatoes
  • Garlic cloves
  • Dijon
  • Dijon mustard
  • Lemon
  • Olive oil
  • Salt
  • Pepper
  • Garnish if desired: fresh italian parsley, feta

How To Make Mediterranean Diet Potatoes

Begin by preheating your oven to 400ºF. Wash and quarter the potatoes. Whisk together your dressing and pour over the potatoes. Arrange the potatoes on the prepared baking sheet. 

Bake the potatoes covered for about 20 minutes and then uncover and bake for an additional 25 minutes until they are lightly browned. 

Top with fresh parsley and feta! Enjoy!

Equipment

  • Sheet pan

Ingredients
 

  • 2 lbs baby yellow potatoes I use Yukon gold
  • 5 cloves garlic minced
  • 1 Tablespoon dijon
  • 1 ½ Tablespoon dijon mustard
  • 1 lemon juiced
  • 4 Tablespoons olive oil
  • Salt and pepper to taste

Garnishes if desired

  • Fresh Italian parsley roughly chopped
  • feta

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • Wash potatoes and cut into quarters. Place in medium bowl.
  • Whisk together the garlic, dijon, lemon juice and olive oil. Pour over the potatoes and toss.
  • Place potatoes on the prepared baking sheet and generously salt and pepper.
  • Cover the pan with foil and bake for 20 minutes.
  • Remove the foil, and continue to bake uncovered for about 25 more minutes until the potatoes are tender and browned on the edges.
  • Garnish with fresh parsley and sprinkle with feta cheese if desired.
  • Enjoy!
