baby yellow potatoes

garlic

dijon

dijon mustard

lemon
juiced

olive oil
Salt and pepper
to taste
Garnishes if desired
Fresh Italian parsley
roughly chopped

Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
Wash potatoes and cut into quarters. Place in medium bowl.
Whisk together the garlic, dijon, lemon juice and olive oil. Pour over the potatoes and toss.
Place potatoes on the prepared baking sheet and generously salt and pepper.
Cover the pan with foil and bake for 20 minutes.
Remove the foil, and continue to bake uncovered for about 25 more minutes until the potatoes are tender and browned on the edges.
Garnish with fresh parsley and sprinkle with feta cheese if desired.
