Easy Bruschetta Chicken Bake

This recipe for bruschetta chicken bake is my go-to on a busy weeknight when I don’t want to spend hours cooking in the kitchen, but still desire a healthy and tasty meal. 

This dish is great for weeknight meals, but also impressive enough to serve to company! My guests always love this staple and are shocked when I tell them how simple it is to prepare this easy bruschetta chicken. 

I love traditional bruschetta – it is so simple and flavorful, made with tomatoes, garlic, basil, and olive oil and served over crusty bread. It is my summer favorite when tomatoes are in season, but you can truly cook it anytime. One of my favorite versions of this recipe is here in Houston at the original Carrabbas restaurant. This bruschetta chicken bake recipe is inspired by this appetizer.

What is Bruschetta Chicken?

Bruschetta Chicken Bake is a simple grilled chicken recipe flavored with simple seasonings and roasted tomatoes. The finishing touch is topping it with a sprinkle of melted mozzarella and a balsamic vinaigrette glaze. 

Instead of fixing this Italian appetizer staple with bread as the base, this bruschetta chicken recipe uses grilled chicken. This recipe still has the same great taste of the traditional appetizer but without the gluten.

It is a wonderful option for those following a gluten-free diet, trying to lower their intake of refined carbohydrates or those wanting to prepare delicious recipes following the Mediterranean diet.

Bruschetta chicken bake is an Italian staple made with chicken breasts and a variety of seasonings and dressings. It is my favorite way to convert everyday chicken breasts into a delicious meal with minimal ingredients. A traditional bruschetta chicken casserole includes:

  • Chicken
  • Cheese
  • Chopped tomatoes
  • Balsamic
  • Basil
  • Garlic

I love a recipe that is both delicious and filled with nutrients. The mix of chicken and mozzarella cheese provide a high protein content to help decrease your sense of hunger and retain lean muscle mass. 

Tomatoes are full of lycopene, an antioxidant that prevents cell damage and helps decrease high blood pressure. Balsamic vinegar is also known to have properties that can help lower your blood pressure and improve blood sugar control. There are so many delicious options to combine with baked bruschetta chicken. I love serving it with a green salad, sauteed spinach, or even over pasta or zucchini noodles.

Easy Substitutions

It is July so tomatoes are fresh in season, and it is hard to fix a tasty bruschetta chicken bake without fresh tomatoes. 

  • I have found it best when using cherry tomatoes, but you could also use Roma tomatoes, or any other tomato just cut into small dice. 
  • If you are not a fan of mozzarella cheese, you could also try substituting provolone cheese. 

How Long Does it Take to Prepare?

This bruschetta chicken bake is a go-to in my household when life gets busy or if I need a quick recipe for a get-together with friends. It takes about 15 minutes to prepare and another 20-30  minutes to cook the chicken.

Equipment

Ingredients
 

Bruschetta topping:

  • 1 Pint Cherry tomatoes quartered
  • 2 Garlic cloves minced
  • 8-10 Large basil leaves chopped
  • 1-2 Tablespoons Olive oil
  • ½ -1 Tablespoon Balsamic vinegar

Chicken:

  • 4 Chicken breasts pounded to an even thickness
  • 1-2 Teaspoons Oregano
  • Salt and pepper to taste
  • ¼ cup Shredded mozzarella
  • 2 Tablespoons Olive oil for sautéing

Substitutions

  • Cherry tomatoes – Roma tomatoes or any other tomato just cut into small dice.
  • Mozzarella cheese – provolone cheese.

Instructions
 

Prep the bruschetta topping:

  • In a medium bowl, combine the tomatoes, garlic, basil, olive oil and balsamic vinegar. Add salt and pepper to taste and set aside.

Make the chicken:

  • Add 1-2 tablespoons of olive oil to a large skillet and preheat over medium-high heat. Season the chicken with oregano, salt and pepper on both sides and add to the skillet. Saute for 4-5 minutes per side until golden brown and the internal temperature of the chicken reaches 165 degrees.
  • Sprinkle a small amount of mozzarella cheese on each breast and cover the skillet until it melts.
  • Place the chicken on a plate and top each breast with bruschetta topping. Drizzle with a little more balsamic vinegar if desired.
