What’s The Difference Between Smoked Salmon And Raw Salmon?
There are two types of smoked salmon.
- Smoked salmon can be prepared “cold” which is cured in salt and sugar for at least 12 hours, and then smoked at a lower temperature for a short period of time.
- Hot smoked salmon is smoked at a higher temperature for a shorter period of time.
Lox is another type of salmon often confused with smoked salmon. Lox is cured only in salt for an extended period of time. Lox is never smoked but produces a similar flakey, thinly sliced salmon.
