This bowl makes a super satisfying, easy lunch! It's packed with protein thanks to the tuna and quinoa. Prep your quinoa in advance so your bowl comes together quickly.
Ingredients
- 1 c cooked quinoa or farro
- 1/2 c canned chickpeas drained and rinsed
- 1/2 c cucumber chopped
- 3/4 c cherry tomatoes halved
- 1 5 oz can tuna in water
- 2 Tbsp crumbled feta
Lemon Vinaigrette
- 2 tsp extra-virgin olive oil
- 1 tsp red wine vinegar
- 1/2 tsp fresh lemon juice
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Whisk together lemon vinaigrette ingredients in a small bowl.
- Combine quinoa, chickpeas, cucumber, tomatoes, and tuna in a large bowl.
- Drizzle with dressing and toss gently to coat.
- Serve over greens alongside green beans. Top with feta.
