Ingredients

Scale
  • 1 c cooked quinoa or farro
  • 1/2 c canned chickpeas, drained and rinsed
  • 1/2 c cucumber, chopped
  • 3/4 c cherry tomatoes, halved
  • 1 (5 oz) can tuna in water
  • 2 Tbsp crumbled feta

Lemon Vinaigrette

  • 2 tsp extra-virgin olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Whisk together lemon vinaigrette ingredients in a small bowl.
  2. Combine quinoa, chickpeas, cucumber, tomatoes, and tuna in a large bowl.
  3. Drizzle with dressing and toss gently to coat.
  4. Serve over greens alongside green beans. Top with feta.
