Instructions
Peel the cucumber and grate using a box grater. Place the cucumber in paper towels or cheesecloth and gently squeeze out excess water. Set aside.
In a medium bowl, combine the greek yogurt, cucumber, lemon juice, olive oil, red wine vinegar, garlic, dill and salt. Taste and adjust seasonings.
Chill until ready to serve. Store in an airtight container in the refrigerator for up to 3 days.
