Crispy, crunch Brussels sprouts salad served with sliced hard-boiled eggs on top. This recipe is wonderful for quick meal prep lunches and dinners.

Ingredients
 

  • 2 hard boiled eggs peeled and sliced
  • 1-2 cups shaved brussels sprouts
  • Sprinkle of parmesan cheese
  • 6 walnuts chopped
  • Favorite Italian dressing such as Primal Kitchen Italian Vinaigrette

Instructions
 

  • Place Brussels sprouts in a bowl. Sprinkle them with parmesan cheese and walnuts.
  • Place eggs on top and drizzle with dressing. Salt and pepper to taste. Enjoy!
