This bowl makes a super satisfying, easy lunch! It's packed with protein thanks to the tuna and quinoa. Prep your quinoa in advance so your bowl comes together quickly.

Ingredients
  

  • 1 c cooked quinoa or farro
  • 1/2 c canned chickpeas drained and rinsed
  • 1/2 c cucumber chopped
  • 3/4 c cherry tomatoes halved
  • 1 5 oz can tuna in water
  • 2 Tbsp crumbled feta

Lemon Vinaigrette

  • 2 tsp extra-virgin olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Whisk together lemon vinaigrette ingredients in a small bowl.
  • Combine quinoa, chickpeas, cucumber, tomatoes, and tuna in a large bowl.
  • Drizzle with dressing and toss gently to coat.
  • Serve over greens alongside green beans. Top with feta.
