This is one of my all time favorite ways to use up leftover apples during the fall and winter! Apples are a great source of the soluble fiber pectin. Soluble fiber helps to lower cholesterol levels and improves gut function.

Ingredients
 

  • 5 large apples peeled, cored and roughly chopped ( I use all varieties: honeycrisp, ambrosia, pink lady, Granny smith)
  • ¼ cup of maple syrup
  • 2 Tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • teaspoon of allspice
  • teaspoon of nutmeg

Instructions
 

  • Place apples in the crockpot and add the remaining ingredients.  Stir all ingredients together. 
  • Cover and cook on high for 5 hours until the apples have reduced and are tender. Your house will smell just like fall! 
  • Puree the apple mixture with an immersion blender until desired consistency. 
  • Continue to cook uncovered for an additional 30 minutes to an hour to thicken the butter. 
  • Let cook and place in an airtight container in the refrigerator for up to one week.
  • Enjoy with toast, muffins, yogurt, as a sandwich spread or on top of cheddar cheese for an appetizer!
