Crockpot Apple Butter
This is one of my all time favorite ways to use up leftover apples during the fall and winter! Apples are a great source of the soluble fiber pectin. Soluble fiber helps to lower cholesterol levels and improves gut function.

large apples
peeled, cored and roughly chopped ( I use all varieties: honeycrisp, ambrosia, pink lady, Granny smith)

cup
of maple syrup

Tablespoons
lemon juice

teaspoon
ground cinnamon

teaspoon
of allspice

teaspoon
of nutmeg

Instructions
Place apples in the crockpot and add the remaining ingredients. Stir all ingredients together.
Cover and cook on high for 5 hours until the apples have reduced and are tender. Your house will smell just like fall!
Puree the apple mixture with an immersion blender until desired consistency.
Continue to cook uncovered for an additional 30 minutes to an hour to thicken the butter.
Let cook and place in an airtight container in the refrigerator for up to one week.
Enjoy with toast, muffins, yogurt, as a sandwich spread or on top of cheddar cheese for an appetizer!
