This simple but excellently curated greek cucumber salad is the perfect fresh and delicious addition that you need on your summer menu.

olive oil

lemon

Instructions
Add the cucumber, tomatoes, red onion, olives, and feta in a medium bowl.
In a small bowl, combine the olive oil, lemon juice, oregano, salt and pepper.
Pour over the salad and toss. Taste and adjust the seasonings. Enjoy!
Notes
Substitutions/Additions:
A good Greek salad is so versatile. You can make it your own with so many different ingredients:
Try adding green, red, or yellow peppers. Maybe pepperoncini, or artichoke hearts.
Spice it up with fresh sliced jalapeno.
If you don't have cherry tomatoes, use other tomatoes and cut into chunks.
Other herbs to try are parsley, mint or basil.
Add a protein for a main meal: chicken, salmon, shrimp
Make it meatless: chickpeas
