Cajun Shrimp Orzo Pasta Recipe
This Cajun Shrimp Orzo Pasta is made by sautéing and adding all the ingredients to cook together in one skillet. I love this method because it builds flavor and the clean up is so easy!

  • Large skillet

Ingredients
 

  • 1 ½ tablespoons olive oil
  • 1-2 Tablespoon cajun seasoning
  • ½ large onion chopped
  • 1 red bell pepper diced
  • 3 cloves garlic chopped
  • 1 can fire roasted diced tomatoes drained
  • 1 cup orzo uncooked
  • 1 ½ cups low sodium chicken or vegetable broth
  • 1 pound large shrimp peeled and deveined if desired
  • 1 cup of fresh spinach chopped
  • Parmesan cheese to garnish
  • Salt and pepper to taste

Instructions
 

  • Place shrimp in a medium bowl and sprinkle with cajun seasonings and toss. Set aside.
  • Heat a large skillet over medium-high heat and add olive oil.
  • Add onion, red bell pepper, and saute for 2-3 minutes. Add garlic and saute for 1 minute. Finally add fire roasted tomatoes, stirring to combine.
  • Add orzo and broth. Stir to combine. Cover and cook for about 10 minutes, stirring occasionally until orzo is soft and just a small amount of liquid remains.
  • Toss in the shrimp and cook an additional 4-5 minutes until shrimp is cooked through.
  • Add the chopped spinach and sprinkle with parmesan cheese. Toss to combine.
  • Salt and pepper to taste.
