Heat 2 tablespoons of pesto in a non-stick medium pan over medium heat.
Once the pesto is starting to melt, crack eggs into one side of the pan. Cook until desired doneness.
Add the fresh spinach to the other side of the pan and let wilt. Season eggs and spinach with salt, pepper and red pepper flakes. Top with parmesan if you like. Remove and set aside.
Toast your favorite bread, top with spinach and then the pesto eggs. Salt and pepper to taste, adding more red pepper and parmesan. Enjoy!
