  • cooking spray
  • 2 eggs
  • hot sauce of choice
  • 1 c Roasted Sweet Potato Salsa


  • Spray a medium skillet with cooking spray and heat over medium. Crack eggs, one at a time into the skillet.
  • Cover and cook until the whites are set but yolk is still runny.
  • Serve eggs over reheated leftover Roasted Sweet Potato Salsa
