Ingredients
 

  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 1 large zucchini sliced
  • 1 large red bell pepper cut into 1” pieces
  • 1-2 cups mushrooms sliced in half
  • 1 small red onion cut into wedges and 1“ pieces

Toppings

  • Crumbled feta cheese
  • Basil

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • In a small bowl, whisk together the olive oil, oregano, and garlic. Set aside.
  • In a large bowl, add all of the vegetables and toss with the olive oil, basil, and garlic mixture.
  • Place the vegetables on the baking sheet making sure you do not crowd the tray. If it is too crowded the vegetables will steam instead of roast. Use another baking sheet if needed.
  • Place the trays in the oven and roast for 20-30 minutes until the vegetables are cooked and slightly browned.
  • Sprinkle with basil and crumbled feta cheese.
