Spicy Shrimp Bowls with Noodles
Shrimp is a great source of lean protein that adds a unique flavor and works perfectly for stir-fried dishes. Brown rice noodles are an upgrade to popular noodle bowls that use noodles made of refined grains.

Ingredients
 

  • 6 ounces uncooked brown rice noodles
  • 2 tablespoons toasted sesame oil
  • 2 bunches scallions cut into 1" pieces
  • 8 ounces medium shrimp peeled and deveined
  • 1 large egg
  • 1/3 cup chopped unsalted peanuts divided
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons unsalted ketchup
  • 2 tablespoons fresh lime juice
  • 1 1/2 tablespoons sriracha chili sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon water

Instructions
 

  • Cook noodles according to package directions. Drain and set aside.
  • Using a whisk, combine sauce ingredients in a small bowl, then set aside.
  • Heat sesame oil in a large nonstick skillet over high heat. Add scallions and shrimp. Cook, stirring often, until scallions are bright green, 1 to 2 minutes.
  • Crack egg into the skillet and continue cooking, stirring constantly, until egg and shrimp are cooked through, about 1 minute.
  • Add noodles, sauce, and half of the peanuts. Toss well to combine.
  • Divide into four serving bowls, and top with fresh cilantro and remaining peanuts. This noodle bowl pairs well with a side of steamed broccoli.
