Come along to make some epic breakfast tacos. My p Come along to make some epic breakfast tacos. My plan was to make a simple chopped salsa with cilantro, tomatoes, and a pepper. I just diced my veggies, topped them with a little squeeze of lemon, a shake of red pepper flakes, and fresh cracked pepper. This veggie packed breakfast taco is the perfect way to start the day. I served mine in a corn tortilla and topped it with a little feta. Enjoy!

Green peppers are high in vitamin C, vitamin B6, potassium, and a little iron. Tomatoes are not only amazing this time of year, but they are high in potassium, fiber, and antioxidants like lycopene.
